What is birdnest?

Birdnest is a nest made of swallows' (mainly swiflets) saliva combined with feathers and grass to lay eggs.

It's only when swallows want to build nest and lay eggs that they will secrete a thick and gelatinous liquid (saliva).
Their saliva will slowly solidifies when exposed to air, and will gradually form into a white bowl-shaped nest.

When the eggs are hatched and the offspring fly off, the birds will abandon the birdnests

After the bird's nest is picked, it has to undergo complicated processing such as steaming, soaking, removing impurities, picking hair, and drying to make the finished birdnest we see in the market.
